Raw. Sold in jars. Our organic honey comes from a local honeybee farmer. He is located in Pennsylvania over the summer months, but transports his bees down to Florida in the winter to allow them to feed on the local orange trees down there. This is to avoid feeding the bees processed sugars during the lean winter months and allows the bees to naturally process and create their own sugars from organic orange tree blossoms.
