Summarized From NourishedKitchen.com
Why You Should Eat Liver (and, no, its not a storehouse for toxins)

FICTION: But the liver is the bodys filter!  I would never eat liver!  Its a storehouse for toxins!  I love liver, but its too high in cholesterol to eat.

FACT: Liver neutralizes, but does not store toxins. Liver is one of the most concentrated sources of vitamins and minerals. Liver is extraordinarily nutrient dense and offers more folate and more minerals than does kale. Always source your liver from healthy, pasture-raised animals for optimal nutrient content.

The liver functions to neutralize environmental toxins as well as toxins we (or other animals) consume like antibiotics, pharmaceutical drugs and other potential toxins.  While the liver functions to neutralize these toxins, they are not stored in the liver; rather, if they cannot be eliminated through the bodys waste functions, theyre likely to be stored in visceral fat.
