Goat Colby
This is for the unsalted Goat Colby. As you know the batches vary. The batch I received did not look or taste like the Cow Colby. It had holes, was softer and tasted like Gruyere cheese. The goat milk taste was evident. Whatever one wants to call it, this cheese was EXCELLENT! I hope the next batch I get is close the first one.
